A Better Dinner Usually Starts With One Small Move.
Like thousands of home cooks, I was making the same proteins week after week. Chicken breasts, pan seared salmon, pork chops, and steaks. When I had time, they were seasoned fine. They were cooked through. But Tuesday night dinner kept feeling routine.
The protein wasn't the secret. The skillet fond was. When you deglaze those browned flavors left behind with wine or broth, swirl in aromatics, and finish with cold butter or cream, you get the reaction: "You made this?"
That is why I created It's Pat's Place and The Sauce Effect. Not to turn you into a culinary school graduate, but to give you one finishing skill that makes dinner feel more special.
